Soups, like salads, present an excellent opportunity for the cook to display good taste and judgment.
The great difficulty lies in selecting the most appropriate soup for each particular occasion; it would be well to first select your bill of fare, after which decide upon the soup.
The season, and force of circumstances, may compel you to decide upon a heavy fish, such as salmon, trout, or other oleaginous fishes, and heavy joints and entrees.
Under these circumstances it must necessarily follow that a light soup should begin the dinner, and vice versa; for large parties, one light and one heavy soup is always in order.
There is as much art in arranging a bill of fare and harmonizing the peculiarities of the various dishes, as there is in preparing the colors for a painting; the soup represents the pivot upon which harmony depends.

Table of contents then onto the recipes.
The recipes are not written out like we see them today. There is no ingredient listing, everything is written in words. Like how they tell you what to do to make beef stock. We have several containers we made from our turkey the other week.
Makes awesome turkey noodle soup with just a few spices and herbs.
Some real good finds in this ancient recipe book.
Other works in the cookery series are listed at the end of this book.

This is more history than a cook book, and is interesting in that regard. It does not contain a list of ingredients, and frequently no measurements. With no refrigeration, no hothouses for fresh veggies, no international food trade, their choices were limited. If this is what the folks ate in the 1800s, then their food was somewhat bland, and, well, kinda gross. Mock turtle soup made from boiling a calf head (brain-removed, of course, but not the hair.

A relic of a bygone age
21st century cookbooks aren't written this way. It's doubtful that they could be. For one thing, this one seems to be aimed at someone who cooks enormous meals for crowds of people, probably in a manor or other large residence because the quantities are overwhelming. The ingredients (veal knuckles, for example) are another clue. It's fun to browse through and might provide inspiration if you're looking for something off the beaten track.

Historically written.
Not a cookbook I can use today, but I did enjoy reading the old recipes. Great for the history lover.

This late 1800s recipe book was an interesting recipe book to read, with ones I would try, and ones I would eschew. 🍲

This is more of an historical book on cooking then something you would use to make dinner as many of the ingredients are hard to find as well as the obsolete measurements used. I keep this in my "Survival Section" as many of the methods do not rely on modern appliances.

Poor presentation
This book contains no ingredient lists or instruction lists. There is no nutritional data or caloric information either. Just paragraph descriptions.

it is worth a skim through if it is free as I found it on Amazon for free.
