Gorgeous photographs in this great vegan cookbook. All the recipes are made with easy-to-find ingredients and they are simple enough for a beginner to follow. Some of the lunches would have to be made ahead to be so-called "on the go", but they'd definitely be perfect for a casual, healthy dinner. I especially loved the Lentil Balls (great for protein & fiber) and the Peanut Butter Banana Pancakes (made with no egg or dairy). Yum!

I had to turn this book back into the library and have only had the chance to make one recipe from it thus far, but I have to give it 5 stars on the basis of that recipe alone: the Crunch Time Chocolate Crispy bars are SOOOOOO good! Easy, no bake, no processed sugar. Amazing. I look forward to making more recipes from the book at some point (wonderful, inspiring pics, and everything looks easy to prepare - yay). Yum.

Lots of sweet breakfasts; not too many savory ones. Lunch recipes look good, but not really suited for take-to-work lunches. Would be ok for dinners at home when there's time to cook. Really beautiful photos.

For a lazy person like myself who doesn't want to spend an excessive amount of time seeking out unusual ingredients or wading through five billion steps of a recipe, this book was absolutely AMAZING.

I loved that the ingredients are mostly healthy whole foods that were already in my fridge or pantry and I enjoyed trying out fairly simple recipes enhanced by beautiful photographs (that helped me to know I was on the right track!). Despite the fact that I'm an utter disaster in the kitchen, I had no trouble making anything I selected and everything I tried was delicious and nutritious (without tasting how you may expect easy healthy vegan food to taste).

Two thumbs up, five stars -- great cookbook!!!!
