Indian tomato & lentil soup is the best! Update: Now that I'm back on WW, I'm using this even more instead of constantly using the few recipes I tried before. Almost everything I've made in here is EASY and delicious! These are just light vegetarian recipes for those of you not on Weight Watchers. I recommend it to all vegetarians--no need to be a member of WW.

The tofu mayo substitute was one of my favorite recipes. You can use it to make delicious creamy salad dressings or creamy soups, things you wouldn't normally find in a diet book. The spinach pie recipe is pretty good too.

I think almost everything in here looks delicious, and nutrition info/points are available for each recipe. If only I think I could sell my carnivorous family on these . . .
