Great! I love cookbooks like this one! Really interesting info about little-known greens (and a few other foods), as well as cooking methods. I'll never make more than a few of these recipes, but they will definitely influence my cooking.
It's hard to find, but I kept checking Amazon and finally got a good used copy for not too much.
This book epitomizes Paula's skills as one of the consummate culinary authors of our and all time. She truly researched her topics and recipes first-hand, traveling extensively, gathering recipes given to her by residents, cooks, and chefs of all the countries and regions named. She spent time in the different regions with the residents, often a guest in their homes, shopping in markets or bazaars or foraging for ingredients, and then cooking with them in their kitchens. When an ingredient was strictly local she took the time to research and identify the scientific names and/or possible acceptable substitutes for such. I've found precious few other food writers who dedicated as much time and effort to authenticity, especially from the "common (wo)man's" perspective. They are true authentic recipes and I was quite saddened to read of her retirement a decade ago for health reasons. She passionately loved her writing and undoubtedly would have continued were she able. This review can easily be applied to any of her books, all of which I treasure in my personal collection, and the meals I've cooked and shared because of them. Cent'anni!
Everything I've cooked so far from this book has been very tasty. Recipes vary in complexity. I like improvising a bit in the kitchen and this book gave me lots of ideas for food combinations to experiment with. Note: this book has some vegetarian recipes, but most include meat or dairy, even if in modest amounts.
This volume covers a wide range of countries so there is no in-depth look at one country's cuisine. It's by a great author of cookbooks on this region, so I have lots of confidence in it. We found several recipes to broaden our culinary adventures.
I love reading this cookbook. I have not actually made anything from it yet. Reason: lots of ingredients and multi-step preparation. But soon, I will tackle the greens and grains.
