What a great book from Joni Newman and Celine Steen! Great recipes that are easy to make and wonderful pictures to show the appetizing results. They give you suggestions for milk, cheese, eggs, chicken, beef, and seafood substitutions. The glossary is very helpful for explanation of ingredients. They even give you traditional recipes on one page and on the very next page the vegan version. Brioche Waffles, Passion FruitnCurd, Strawberry Lemonade Cupcakes, Cluck-Free Cutlets, Moroccan Couscous Salad, Coconut Panna Cotta with Berries, .......Even if you are not a vegan, you will love this cookbook !
Being a long time vegetarian I was reluctant to read this book. I was wrong and am very glad I picked it up. The book has educational and novel ways to create substitutions for animal products, divided by category (dairy, eggs, poultry etc.). This info is pretty useful. The added benefit are the recipes, which are outstanding on their own but also serve to teach the use of the substitutions. I highly recommend reading.
