Kelly Brozyna has done it again with her book of gluten-free, soy-free, sugar-free and dairy-free ice cream. Created and photographed by Kelly, this lovely volume contains a primer on sweeteners, thickeners, the ice cream base and more. Along with a section on tips and tools, she provides the reader with everything needed to create perfect dairy-free Paleo ice cream.
While most of us agree treats should be limited to special occasions, a sampling of Kelly’s recipes shows how wonderful ice cream can be. Even more so when it’s good for you. Five chapters of recipes cover Classic Flavors (think Vanilla, Chocolate, Pumpkin, Rum Raisin and Swiss Almond), Coffee and Tea Ice Cream such as Earl Grey and Jasmine Tea, Cake and Cookies (Frozen Mint Chocolate Whoopie Pies), Yogurt, Pops and Sherbet, and finally, Sauces and Sprinkled Toppings.
Kelly’s recipes call for a blender and an ice cream machine. My first foray into the world of homemade Paleo ice cream began with the Vanilla Ice Cream recipe on page 28. At the time I did not own an ice cream machine and found the result tasty but a bit on the icy side, so I also recommend these recipes be made using an electric ice cream machine. I’ve since had excellent results with the Cuisinart ICE-21, a moderate-cost machine. While Vanilla is my favorite ice cream flavor, I highly recommend the Blueberry Lavender (page 34) and the coffee ice cream (page 76).
The recipes are easy to follow and are accompanied by wonderful photos. If you love ice cream but want a healthful alternative to the sugar-sweetened, full dairy version, Kelly Broznya’s book of exciting recipes is for you. 4.5 stars.

Beautiful photos, interesting flavor combinations, and I love that she uses a combination of coconut milk and almond/cashew/hemp milk to cut the coconut flavor.
The Brownie Batter Ice Cream was completely insane--like a less sweet Ben & Jerry's. (It just needed a little extra coarse salt to make the brownie batter just right.) My coconut-hating sister-in-law loved it, and that's saying something!
I was initially disappointed that Kelly didn't include any recipes with egg yolks for a traditional custard-style ice cream, but I guess I'll see if that opinion holds as I work my way through the book. The chocolate ice cream certainly wasn't lacking any richness.

I am completely ecstatic to try every single recipe in this beautifully illustrated book. Every recipe looks absolutely delicious, and won't make me sick! For all of us ice cream lovers with food allergies, rejoice! These recipes are made without eggs, gluten, soy, dairy, or refined sugar. As someone who can't have soy or dairy, finding dessert recipes has always been difficult because most dairy free recipes unfortunately use soy as the substitute. But now I have a whole book filled with safe and scrumptious recipes for ice cream, cake, cookies, popsicles, yogurt, toppings, and more. And did I mention that each recipe has a ridiculously delicious looking photo? Fans of this cookbook should also check out "Vegan a la Mode" by Hannah Kaminsky!

What a treat this cookbook is in every sense of the word! Filled with delicious recipes and gorgeous photos of all the recipes included plus many helpful tips to help with creating them. Cannot wait to make the Butter Pecan, a personal favourite that I have had to go without since having to eliminate dairy from my diet. The Swiss Almond looks fab as well as the Salted Caramel Chocolate Chunk Ice Cream. There are also recipes for frozen yoghurt made with coconut and cashew milk, sherbets and pops. She covers all the bases for dairy-free treats and just in time for summer! I highly recommend it!

i'd like to try some things from this book. i guess it's over-all paleo friendly, which i didn't realize was part of the point going into it, but i like that she uses primarily coconut milk as the base and different kinds of sweeteners. this one is definitely the most up my alley. most of her recipes are pretty classic or expected flavor-wise, but that's really the easiest thing to play with in ice cream-- as generally speaking, it's all about that base...
