Great Ideas!

I like to eat my vegetables, but having a cold salad everyday is pretty unsatisfactory. This book provides lots of easy and interesting recipes, packed full of healthy vegetables. I'm quite inspired!

I've been leery of the vast amount of free cookbooks available via Amazon/Kindle. Some of them have called themselves a book and have three or so recipes geared for the serve from a can crowd. This book is not one of those kind of cookbooks. The recipes sound so delicious, chalked full of yummy veggies, beans, meats, herbs... I can't wait until grocery day just to make some of these soups for the chilly days of winter we are still having.
I am an avid collector of cookbooks, and this is for sure one of the digital ones I plan on keeping. My only complaint about the format is a serious lack of pictures. These soups would look gorgeous and make the book even more tempting, but even still, don't pass it up.
And remember, in place of margarine use coconut oil or butter!

This book is a must have as it contains some of the most delicious and exciting recipes for making soups. The ingredients are not very expensive and most times are things I already have in my cupboard. The highlight of the book for me was that they are ALL low calorie foods which is a plus when it comes to balancing my weight. I am an avid recipe collector and have tried some from many different cultures so I am happy I now have these ones as a go-to and keepsake. A couple of my favourites were Roasted Red Pepper Soups and Cauliflower Soup:-) You won't regret buying this book and I highly recommend it!!! BUY IT NOW!!!

Okay

It was okay, there be were a few good recipes I liked but nothing to write home about. Just okay.

Soups

Nice variety of soup recipes. With a few extra crackpot recipes at the end. It would be nice to have some pictures of the finished e.

Incredibly Delicious Casserole Recipes from the Mediterranean Region (Healthy Cookbook Series 2)
Cookbook using lean cuts of meat with Mediterranean style recipes. No pictures and no nutritional information.
Does state how many the dish will serve. Chicken and rice casserole would be our choice to make.

What variety!

Although I haven't tried a recipe yet, I see many that are light and nutritious. A big switch from some of my pasta laden soups and stews.
