I love this cookbook so much and I keep coming back to it again and again. I know that seems silly, like, what more can you do with deviled eggs than the basic recipe? But this book has the best base recipe *plus* awesome variations with pulled pork, buttered corn, pimiento cheese, and a zillion other flavor combinations. For someone who really likes deviled eggs and has a lot of picky eating issues, this cookbook is great because it's good at presenting ideas (with gooooorgeous pictures) and letting you experiment with those ideas. "Hmm, what if Classic Picnic with Bacon Cheddar?" WHAT IF, INDEED.

What fun. Especially if you love deviled eggs. And if you attend potlucks on a regular basis. Simple to make recipes. Tasty. And able to be tweaked for special occasions and holidays. This book is a great addition to any cookbook collection.
There are several recipes in this book that I am looking forward to making. There are some very over the top - IMO - recipes included in this book. I am not sure that my family is ready for caviar or truffles with their eggs and I know I don't what maple syrup anywhere near my egg yolk masterpieces!
Deviled Eggs are one thing that this reviewer has heard a lot about over time, but never really investigated them, mostly since a traumatic series of school lunches has left a bit of an aversion to boiled eggs. This book changed that, or at least, has made the aversion a little less traumatic.
Apparently, Deviled Eggs (hard-boiled eggs, shelled, cut in half and filled with egg yolks and mixed with other ingredients such as mayonnaise) are one of the most popular appetisers in the United States. This book is a very colourful, photogenic celebration of this humble dish, a cornucopia of history and cultural references and, of course, a great deal of recipes as well. There is even a range of Deviled Egg-specific dish ware to serve your eggs on.
The author has even given a lot of thought to what recipes could be used on a specific holiday occasion, so you have a whole calendar with suggested recipes just in case you have not had enough eggs… and then there are the recommendations for different types of party too. One must wonder if the author has Deviled Eggs every day at home, as the enthusiasm for the subject seems to be bordering on addiction. After a brief introduction to eggs and their various cooking tips - which probably explained this reviewer's school-time traumas in fact - as well as a comprehensive overview of decoration and storage guidance it is time to see some recipes.
Despite having a fairly common, unavoidable constant (the eggs) the various fillings and decorations managed to be fairly extensive and diverse. In fact, one could see potential for the various fillings and designs to be used on things other than eggs, such as a biscuit base or even as a decoration over flat items like fish or meat. Let your imagination run riot. Certainly the recipes are self explanatory and contain all the key bits and pieces you would need. Being a particular American speciality, one can sort of understand the lack of metric measurements also featuring in the recipes, but in today's "wide world" it seems a sloppy oversight nonetheless.
A special mention must be made about the colour photographs used within this book as they could be separately used as a lesson in how the "same thing" can be photographed in a plethora of different ways without it looking boring or repetitive. To the sceptical hard-boiled egg eater, the photographs were so engaging it could have been a photographic/art book in its own right! Is it hypocritical to say that this reviewer liked this book even though he (still) dislikes one of the core components that are central to the book? Is it so bad to like Scotch Eggs, for example, whilst removing the egg… and is it a contradiction in terms to enjoy other egg dishes produced by scrambling or frying them? Who said that men are not logical…

I really enjoyed this book. I will be honest...I love books about cooking which include pictures. Makes it more fun and interesting for me.
The book starts off with a little history of the Deviled Eggs. It is true what the book says, these suckers always find a way at any holiday and any party. My husband and I love them and this book is perfect for us because we can try many different kinds through these amazing recipes and invite friends and family over for a little Deviled Egg party.
I like how the book talks about the plates for these eggs. Thankfully we are able to find more of them in stores these days.
One of my favorite things about this book....they list holidays and the perfect kind of Deviled Egg to go with that holiday...not only do they provide the recipes but pictures too. Happy girl right here!
Conclusion...this book is very useful for anyone who loves Deviled Eggs. The history, the facts, the recipes and pictures makes this book 5 STAR! It is a must to have it in the kitchen!!!
If Kathy Casey played third base for the Mariners, she would be described a "many-tool player." In the world of good things to eat and drink, she is a chef, a mixologist, an author and columnist, a broadcast personality, and the head of an innovative staff which pioneers food concepts for hotels, bars and restaurants. She also wrote the best book on deviled eggs in the world. The canvas of half a hard-boiled egg is a tiny artistic medium but it can be exploited and elevated with stunning results. Casey uses analogy (one of the best ways to innovate new food concept) to develop her ideas. If mayonnaise and Italian herbs work, why not yoghurt and Greek herbs? If corned beef and cabbage work as a main, why not shredded corned beef and sauerkraut? If Green Goddess salad dressing works, why not avocado and tarragon? If green eggs and ham work for Doctor Seuss, why not in a deviled egg? Almost all of her recipes are launching places from which the inspired home cook can depart in their own creative directions.
Who'd have thunk that there was so many different ways to make deviled eggs? This recipe book contained SO many unique recipes, it wasn't even funny. Seriously, Pumpkin Pie Deviled Eggs that look SPECTACULAR! That was just one of them. On that note, I don't know if this is ever I book I would buy, but would know where it was at my library.
BTW...her tips/helps were just as great! The author laid this book out beautifully!
Wow! Loved this nich cookbook! My family loves deviled eggs! I loved the layout of this book! Wonderful pictures, good directions and full of tips the make your cooking eggsperiance fantastic. Tried one recipe and the techniques tonight with great success. Can't wait to try one of the more daring recipes for Super Bowl Sunday!
This is a beautiful book. Illustrations are wonderful. Regardless of the content the book is a joy to behold. And the eggs look d'lish! It gives the history of the deviled egg, how to boil the perfect egg, and many unusual, inspiring recipes for those of us who are egg enthusiasts. Highly recommended.
As a fan of deviled eggs, I was looking forward to getting a glance at this one. With a seemingly endless number of recipes, influenced by a variety of cuisines, there is something for everyone.
As a cooked egg lover, I still amazed on how many different taste you can get on a 'mere' deviled egg. Compact with history, tips & trick and straight forward recipes; a must-have for egg lover ;p
Good tips and recipes with a few twists - especially pumpkin pie deviled eggs. Makes me think of ways of using these type of flavours in egg sandwiches.
This is a super fun book IF you love deviled eggs, which I do. She gets into the history of the food, the best ways to large-batch cook them, serving platters, etc and is very thorough and accurate. I found her storage and transportation tips to be particularly helpful. Her basic recipe is good, but it's different than mine so not what my family is used to. Some of the variations are hits - the bloody mary deviled eggs, the smoked salmon deviled eggs. Some were misses - pumpkin spice in particular. But this is a very creative book with lots of good ideas for serving up a favorite appetizer.
The author is super creative when it comes to deviled eggs. I was looking for ways to increase my protein and this book gave me a ton of ideas. Some of the more fancier ones aren't my style (caviar??) and the sweet one made my stomach turn a bit (sweet pumpkin egg, oh no) but honestly I'd prob try one if someone else made it lol.
Beautiful photography throughout, but featured an odd mix of approachable classic recipes and outlandish ingredients recipes like truffles and edible gold leafing.
There are many clever ideas in this book, it is beautifully illustrated, and has much to recommend it. However, it's hard to improve on the simplicity of one's own tried-and-true recipe.
This is a fun little recipe book celebrating deviled eggs. I may just have to try some. The introductory pages leading up to the actual recipes were informative and interesting.
A fun little book if you are a deviled egg fan and like to get creative with them. I have made the Smoked Salmon Deviled Eggs with Sour Cream (with some modifications), recipe here: http://kahakaikitchen.blogspot.com/20..., as well as the Grandma's Old-Fashioned Deviled Eggs and the Wasabi Deviled Eggs for a party. All were good. There are tips, tricks and party ideas included, and following the directions for cooking eggs--1" water of eggs, bring to a boil, remove from heat, cover and let sit for 15 minutes (a couple minutes longer than I normally cook them) before running under cold water to cool--and my eggs were perfectly cooked and peeled easily.
Pacific Northwest Chef Kathy Casey shares her expertise and creativity in this cookbook that's all about the eggs...deviled eggs. It's full of general cooking tips and dozens of unique deviled egg recipes. I am looking forward to trying the ones that feature smoked salmon, BLTs, BBQ pork, steak, Wasabi, buffalo style and even beets. Beautiful pictures of deviled eggs abound in this cookbook, but unfortunately not every recipe is pictured--even though some eggs are pictured twice.
I kept taking this book over to my true love and saying, "I want THAT." There are multiple recipes in here that I can't wait to try, and one I think I will use for my son's birthday instead of cake, he will like it that much. There are only a very few recipes in this book that made me scrunch up my nose and hurry by. The photos are perfection!
