An American-Indian who makes Indian food from childhood memories for an American palette. I made about seven of these dishes and was delighted by the result. If you are looking for authentic but accessible, this would be the closest I could recommend. I am not an authority of Indian cooking, just a fan.
I recommend for the less busy cook that can dedicate some time to this book and cook meals and not just the dishes.
I can cook almost every major type of food except Indian,so I felt it was time to expand my already impressive skills.This book was written by an award winning film maker with a love of food.There is a lot written about history of various ingredients and history.I don't get books that are just a list of recipes.A freakin' trained monkey can figure those out. A lot of techniques are similar to traditional French or Italian,just different seasonings.I was reminded of a cute Indian girl I had a crush on in Kindergarten.Her house always smelled like spices I wouldn't even hear of until years later.Her mom was always making crispy flat breads for stews.I'm hungry again.
I love the recipes in this cookbook. I grew up learning how to cook Indian food, mostly traditional vegetarian food. The recipes in this book are not vegetarian, although there are quite a few that are, and are not heavy with lots of oil and ghee. They each have a slightly "noveau" feel to them, and each one I've tried is delicious! I keep coming back to this book whenever I am looking for something new to make for dinner or parties.
It is indeed full of passionate recipes. I also enjoy reading Ismail Merchant's anecdotes about movie stars and how he has prepared so many feasts for them.
This is my favourite indian cooking book. A boatload of our staple meals have come out of it (easily converted to vegan :>), and I'm not finished exploring.
