I always like the books in the “Fix-It and Forget-It” series and have a lot of them either on Kindle or in hard copy. We’ve been getting into using our pressure cooker mostly for stews and chili, but are hoping to branch out and try to make more things with our cooker. There were quite a few recipes that sounded good to try, although I don’t think a lot of them sounded like festive choices necessarily. Still it offers a lot of variety.
I like the Hope Comerford cookbooks because they feature simple recipes made with readily available ingredients in labor-saving appliances such as the CrockPot or Instant Pot. The first dish that I prepared from this Holiday Instant Pot Cookbook was the tasty and hearty Split Pea Soup. I confess that I tossed in a full cup of diced ham instead of the 1/3 cup the recipe specified, but the prep and cook time were just right as written.
