A truly beautiful book from one of my favourite restaurants. Given the nature of the food it is incredibly complex making it very difficult to replicate in the kitchen... I foolishly chose a dish to make for dinner and stumbled when one element required 3 weeks of fermenting!

But it gives wonderful inspiration and insights into how such artistic food is made.
