A vegetarian cookbook, organized by ingredient/vegetable. No photos. Each section includes an interesting synopsis, including the history of the vegetable. I’m reminded, reading through them, of the Christian monk’s roll in the study & dissemination of many cultivated foods derived from the Americas - corn, beans, avocados, etc. Did not test any of the recipes.
