I make a pot of soup every week, and I was hoping for some inspiration, but this book is terrible. Repetitive, basic recipes with shockingly few ingredients and seasonings. Honestly, I don’t want to try any of these soups. Maybe there’s a gem buried in here, but I’m not taking the time to find it. Really disappointing.
I just threw this book into my recycling after about the 10th recipe with inaccurate times, too little seasoning, and bizarre instructions. Would NOT recommend wasting your money or time on this "recipe" book.

What a compilation of Soups, Stews, Broths. Over 500 pages worth that reader could conceivably try a different soup each day for 3.5 years without having to repeat a recipe! To impress the cook even more, Reader's Digest includes a section on "Favorite Side Dishes" because, realistically, many of us would prefer to eat something along with the soup, non? Side dishes I would like to try include: Corned Beef & Cabbage Calzones, Herbed Cheese Bagels, Lemon-Walnut Bread, Endive/Pear/Roquefort Salad, Lobster Salad Rolls, Panzanella and Olives.
Plenty of great soup recipes here. The only reason I didn't give it a 5 was that so many of them required heavy cream or half & half. I realize this gives creamy soup a nice flavor & texture but I wish there had been some substitution suggestions. But there were plenty of healthy, low-fat & fast options in this book as well. For example, I recently made the Butternut Squash recipe on p. 404, and it was delicious, and used a cup of buttermilk (I made my own from low-fat, dried buttermilk that I used for my bread machine recipes) and added some chile powder to give it a little kick - and it was delicious. So if you're into soup (and with the cooler weather setting in, what's not to like about a good bowl of soup?), give it a try.
Over 500 pages of soup recipes. The combinations and variety of soups are unbelievable. I didn't know there were so many soups or variations of popular soups. I am not a very adventurous eater, so many of the recipes did not sound good to me. But out of the almost 1000 recipes, I found 20 soups that I have never made that I want to make. I wish I had more time to cook. It really was quite an amazing read.
I am LOVING this book! I don't own it yet, simply have it checked out of the library, but we can't get enough of it. I've made six different soups so far, and they've all been delicious and healthy. I recommend this book for anyone.
I was pleased with this cookbook. I modified the recipes that I used only because there were ingredients included that I did not prefer in a soup (like barley), but I thought that the original recipe would have also been a winner. Bon appétit!
