This is really good, in spite of James' instruction not to bother weighing salt and to just use table salt. Considering that a.) table salt (with iodine) can taste bitter, and b.) other kinds of salt (seasalt, kosher salt) come in so many different sizes of grinds, it's essential to weigh. The argument that electronic scales can't handle small amounts doesn't hold a lot of water. Our inexpensive electronic scale weighs 10 grams salt fairly accurately.

One teaspoon of table salt weighs 6 grams, but depending on the brand, one teaspoon of Kosher salt weighs 3, 3.5, or 4 grams. One teaspoon of salt flakes (depending on the size of the flakes) weight 2.5 grams. See? Weigh the salt!

(If following James Morton's recipes, keep in mind that his notion of "1 tsp salt" means "6 grams")
