The Avocado Cookbook: Fun and Easy Recipes by Michael Holtby
This book is broken up into chapters for appetizers, salads, salsa, soups, main dishes desserts and drinks. Each recipe has a list of ingredients and directions. There are NO pictures and NO nutritional information but remember avocados contain healthy fat. It's the other items combined that might not make the dish so healthy, especially if you have to deep fry the dish.
Chocolate avocado muffins look to be the healthiest due to the ingredients=-i'd use olive oil or canola, NOT coconut.
Not much else struck my taste buds as I don't want to go out and buy special flours or oils to make one dish.

Avocado, more than just for dip

Who knew there was avocado pie? Or egg rolls? Brownies? Smoothies? Mac and cheese?

This book is jammed full of recipes that will expand your meager recipe section on avocados. Go buy them while they are ripe when you find them on sale. You are going to want to try many different recipes.

There are recipes that defy boundaries, substituting avocado for taco meat, using it instead of pie filling, turning it into soup, deep frying them. Yum and double yumm.

Written and formatted right, distinct lack of pictures. A novice can follow along and seasoned cooks will read slack jawed at the ideas.

Nicely done!

There are some nice little gems in here for tasty treats that really satisfy and soothe the hungry beast. I will refer to it often.
