Seems authentic, but uses too many ingredients, that I don't have on hand, or want to purchase only to see if I like it. Asafetida powder, fresh curry leaves, black mustard seeds, chat masala, bitter neem leaves, ajwain seeds, amchoor powder. So, I won't be making any of these recipes.

This "best of" book was so wonderful that I had to buy the big book from which these recipes were culled.
