Gorgeous, perfect, totally impractical cookbook. In the culinary notes: "This book was written in an age when recipe books were exciting but rather imprecise and when the reading cook was expected to share the author's love of cuisine as well as his implicit know-how. Instructions were erratic. Measurement was generally vague..."
Almost every page is treated to a beautiful sketch or full color illustration by Toulouse-Lautrec, and includes such charming recipes as "Woodcock With Port", "Roast Snipe", "Thrushes With Juniper", etc. I doubt I'll ever cook the majority of meals offered here, but will certainly use the menu suggestions in the back as muse for holiday and celebration feasts. For example: Large sole with tarragon Wild duck with carrots and olives Mushrooms with cream Mademoiselle Tatin's apple tart Goat cheese from Touraine and the Orleanais Dessert
"As a matter of fact, Lautrec used this dish as a judge of character. He would say of people he scorned, "They are not worthy of ring doves with olives, they will never have any and they will never know what it is.""
