From the time I grew up, started working, and got married, my slow cooker became my appliance of preference for food prep. If you could see the first crockpot cookbook I got (as a wedding shower gift...thank you, Krista) with its splattered and crumpled pages, you would know immediately how much I love a slow cooker.

I was happy to agree when Calisto Publisher offered to send me this book.

I am glad to tell you that The Easy 5-Ingredient Slow Cooker Cookbook is everything you want in a slow cooker cookbook. The author, Karen Bellessa Petersen, is a busy mom herself, and she has learned the many values of a slow cooker.

Here are the amazing features of the recipes in this book:
Petersen has included only recipes that contain only five primary ingredients, though the recipes may also include a few pantry staples and simple spices.
Each recipe is meant to be a complete meal.
The recipes require no more than fifteen minutes of preparation time.
The recipes cook for eight hours, the time one is generally away from home.
There are no processed foods used in the recipes.

I tried two recipes from the book. Both were a hearty success with my family. Here is one of the recipes:

Mexican Corn Chowder



1-16 oz. package frozen sweet white corn
1 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1/2 teaspoon ground cumin
4 cups chicken broth
1/2 cup picante sauce
4 medium russet potatoes, peeled
4 bone-in skinless chicken thighs, trimmed of excess fat
2-3 tablespoons fresh lime juice

1. Put the corn in the slow cooker. Sprinkle in the salt, pepper, and cumin. Pour in the broth and the picante sauce. Submerge the potatoes in the liquid. Nestle the chicken thighs in among the potatoes.

2. Cover and cook on low for 8 hours.

3. Transfer the chicken to a cutting board. The meat should practically fall off the bones. Discard the cartilage and bones. Shred the chicken with two forks and return it to the slow cooker.

4. Transfer the potatoes to the cutting board. Smash two of the potatoes with a fork and stir into the slow cooker. Cut the remaining two potatoes into cubes. Gently stir the cubed potatoes and lime juice into the slow cooker. Season with additional salt and pepper, if desired. Ladle the soup into bowls and serve.

Karen Bellassa Petersen’s The Easy 5 Ingredient Slow Cooker Cookbook is a cookbook for ‘busy people’ and a slow cooker cookbook for anyone just beginning to use slow cookers. The title says it all - easy. The meals are not complicated, and one needs basically 5 ingredients. The author uses a few spices, and if she knows a ‘swap’ for an ingredient, she shares it with the reader as well as pointers about buying a slow cookers, freezing slow cooker leftovers, info on pantry staples, and ideas about side dishes. Also, if one enjoys Mexican food, this cookbook has quite a few recipes in this category. Since I am in the ‘Eat Dessert First’ category, I would have liked some more recipes in ‘my’ category.

Full disclosure, I receive this book for free. That has no bearing on my review. This is great resource for those on a busy schedule. These slow cooker recipes are delicious and simple to put together. The author covers everything from breakfast to dessert. Although some recipes have more than five ingredients, those extras are pantry staples. For hectic days, place ingredients in slow cooker as directed, when dinner is ready, enjoy. Most recipes have 5 to 15 minutes prep time. Looking forward to trying many of these great looking recipes.

Amazing book!!! Just what I needed! I love how there's only 5 major ingredients you have to get for the recipes and they are so easy! My husband and I work, so she shares lots of recipes with longer cooking times so I can turn my crockpot on before work and come back and it's ready. I also love the cooking tips provided as well. This has easily become my new favorite cookbook! A must have in every kitchen.

Most everyone has at least one slow cooker, I have 4 small, medium, large and let's feed an army size. I usually end up in a rut fixing the old standbys when I am in a hurry, spaghetti, chili, chowder and the such. Easy 5-Ingredient Slow Cooker Cookbook is about to change that. There are multiple recipes paired with tantalizing photographs that I have read a few I have already tried and plenty more still to go. With Winter fast approaching my crock pots and slow cookers get a lot of workouts. (And yes, there is a difference between a crock pot and a slow cooker, although in some instances a recipe can be cooked in either).



First off, be sure to read over the Slow and Easy introduction, there are a lot of great tips and advice given. What is great about a slow cooker is you can even set it up the night before and have breakfast waiting when you rise in the morning. Or perhaps you have a day of errands and want lunch or dinner waiting. Your book Club or Bible study group or even a Pot luck dinner, no problem. Pull out your trusty Slow Cooker and let it do the work for you while you get on with your day. Breakfast, Lunch Dinner, Dessert or Appetizer, it can do it all. Cold snap on the horizon, try a stew or soup with some warm crusty bread.


With 5 Ingredients you have a quick easy dish ready and waiting. I tried the Egg, Hash Brown and Sausage Breakfast Casserole (turned out great and my family was out the door on time no, hassles.), pair the Tomato soup with some grilled cheese sandwiches and you'll have a winner. Flank Steak Fajitas are great for Mexican Night. You can even make breads and other dessert in your slow cooker, Try the Banana bread for your next Tea and Coffee Social or a Peach Crisp. Whatever you need there is most likely a recipes to be found in this book/
