Excellent book for children who, like my granddaughter, can't eat gluten or dairy and who are affected by sugar. Bought a copy for my son and his family.
I have a new favorite cookbook. Once I went gluten-free, almost 2 years ago I decided I wanted to learn to cook so that I could reduce my gluten exposure. Then, when more food allergies and sensitivities were identified I decided that I needed to learn to cook so that I could survive.
For the most part, it has been a blast. I look through 3-5 cookbooks each week and identify different recipes to try. One of the challenges has been that I don't really know much about cooking. I've been watching lots of Food Network shows and using the internet to learn more about different methods of cooking. I've invested in some different kitchen utensils to make the job easier. I've actually been able to cook some meals without following recipes. These successes make me feel wonderful.
There is a challenge though. I'm a pretty picky eater. I've been trying to expand my menu, but I have definitely missed the comfort foods from pre-allergy days. Most of the cookbooks have great-looking food but it seems that at least 95% of the recipes contain some ingredient or involve a cooking method that makes it unlikely that I'll reach for that recipe on a regular basis.
While I was browsing the library shelves I stumbled across Allergy Proof Recipes for Kids by Leslie Hammond and Lynne Marie Rominger. This cookbook is amazing. Almost every page has a recipe that I can't wait to try. The ones that I have tried are simple to make and taste fantastic. That's pretty amazing when you consider that these recipes are wheat-free, gluten-free, nut-free, egg-free, and dairy-free.
I enjoyed 'cookies n cream' ice cream made from a chocolate sandwich cookie recipe I found in the book. It was so incredibly yummy that I almost had to pinch myself.
Selles raamatus on retseptid jagatud nelja kategooriasse: suupisted, põhiroad, lisandid ning maiustused ja magusad suupisted. Raamatu kaanel on kirjas, et siin on üle 150 nisu-, gluteeni-, piima-, pähkli- ja munavaba ning madala suhkrusisaldusega toidu retsepti. Kõlab väga hästi. Kahjuks raamatu sisuga tutvudes selgub, et osa retsepte on munavabad, kuid sisaldavad piima, järgmistest retseptides pole piima, kuid see-eest on muna.Tõsi, paljude retseptide lõpus on soovitused, et kuidas saaks antud toitu teha kas siis piima-, pähkli-, muna- või suhkruvabalt. Kahjuks on need soovitused suhtelised ühekülgsed. Muna asemel kasutage munaasendajat, piima asemel sojapiima, juust, suhkur ja pähklid jätke välja. Raamatu probleemiks on see, et ta on väga ameerikakeskne. Retseptides on palju koostisaineid, mida meie ei tunne: fajita-liha, Whey Low, Hoisin’i kaste, Monterey Jacki juust, riivitud jicama, 1 kott Hershey’s Chocolate Kisses, 430-grammine karp Hunts Sloppy Joe gluteenivana kastet jms. Plussiks on, et nisujahu retseptides ei kasutata. Suures enamuses on küpsetiste koostises riisijahu.
Raamatut lugedes häiris mind, et autor ei arvesta, et inimestel võib olla peale piima-, muna-, gluteeni- ja pähkliallergia veel muidki allergiaid. Lk-l 153 seisab: “Aurutatud või keedetud köögiviljad ei kujuta endast küll mingit ohtu…”, lk-l 212 on kirjas: “See kook ei kätke endas mitte mingit ohtu allergikuile.”
Raamatus on mõningaid huvitavaid retsepte, kuid kokkuvõttes ikkagi pettumus, sest ootused olid märksa kõrgemad.
Not all the recipes seem right. I have made the Frosted Brownies, and there is something very wrong with the recipe. 1/2 cup shortening to 1 cup flour? They were a soggy curdled greasy mess. And there are two recipes with "tamale" in the title, which makes you think they'd have cornmeal in them....nope, just lots of veggies mixed and cooked together. I'm hoping other recipes end up working out because my 2 year old with Celiac Disease needs more variety than rice rice and more rice!
Lots of uber-safe recipes; not sure kids would eat all of 'em, but the recipes that approximate what "everyone else" is eating would probably be big hits!
Also, there are lots of helpful hints and nutritional tidbits to find throughout the pages. Definitely worth checking out!
