There are few more simple or delicious ways to prepare a meal than to throw some fresh ingredients into a pan with a handful of herbs, a cupful or two of stock or wine and leave it all to simmer lazily until the aroma becomes irresistible. There are no difficult techniques for making soups and stews but they are an enjoyable part of every cook's repertoire. From delicate clear broths to creamy seafood chowders, from old classics like Famous Irish Stew to exotic Persian Chicken, the clear step-by-step instructions and photographs will lead you through each recipe. There are also ideas for accompaniments to mop up all that delicious sauce, and croutons to add a little extra crunch to your soups.

An excellent place to begin if you're new to cooking complex soups and stews. Also this edition offers great suggestions and seasonal favorites. Four to six pictures will sometimes be included for a recipe if there are techniques that need to be demonstrated and nearly every recipe shows a finished product with suggested garnish or accompaniment.

As I'm a lover of eating and making soups I definitely plan to keep this in my cookbook collection!
