My mum bought this for me as part of Jólabókaflóð (Icelandic Book Flood for intensive reading time) that we have added to our holiday traditions. She got it for me, because for the first time in my life I am enjoying Thai food. And that is thanks to The Giggling Squid.
Even my very picky 5 year old tried new things thanks to their Massaman curry, which absolutely shocked me.
So I was absolutely delighted in getting this cookbook. It's even got some of my favourites in it which makes me super excited.
I really did enjoy also reading the story of the founder and why some of the dishes have become a true British Thai fusion.
5 stars for the recipes written for two people which I don’t often see. 4 stars for flavor. 2 stars for the large amount that some of the supporting recipes make. Here’s looking at you stir fry sauce. 1 star for the amount of sugar in the coconut rice (6 tablespoons!!) it was delicious but too sweet for a savory dish. Desert would be more appropriate.
I’ve never eaten at this restaurant before because I live in the US. On a recent trip to London I stopped by a Waterstones and saw this cookbook with the fun name and bright pink cover and couldn’t resist buying it. I’ve tried several of the recipes and have come to the conclusion that I need to put my math hat on and reduce the supporting recipes. Most people just don’t need a quart of stir fry sauce on hand when most recipes call for a couple of tablespoons. I will also be adjusting the sugar downward in the coconut rice, probably by half and I think it will still be delicious
Love Giggling Squid's food and it's vibe, but the cook book is not that good- little to no detail or practical advice on making the dishes or sourcing ingredients. Pictures are bright and clear.
