Let’s get this out of the way: Patty Morrell-Ruíz’s The Essential Cuban Cookbook: 50 Classic Recipes is not the essential Cuban cookbook. (There’s not even a frita recipe in it.) That would be Ana Quincoce’s Sabor!: A Passion for Cuban Cuisine or maybe Joyce Lafray’s cuba cocina: The Tantalizing World of Cuban Cooking — Yesterday, Today, and Tomorrow
That said, The Essential Cuban Cookbook is a nice introduction to someone new to Cuban cooking — especially as it’s free for those subscribed to Kindle Unlimited. You’ll find the grilled Cuban sandwich, tamales (different than the Mexican kind), guava pastries, lechon asado (roasted pork), arroz con pollo, fricasé de pollo (more of a cacciatore than a gringo fricassee) — actually, most of the greatest hits. It’s not for Cuban home cooks looking to improve (like yours truly), but for others, it’s a solid four-star read.
I much prefer Grace Ramírez’sThe 5-Ingredient Electric Pressure Cooker Cookbook, even though Ramírez is Venezuelan and I’m Cuban. This 99-cent wonder is one of the best Caribbean cookbooks there is.

A wonderful introduction to the vibrant flavors of Cuban cooking. The recipes are approachable, flavorful, and easy to follow, making it enjoyable to explore classic Cuban dishes at home. I especially appreciated the variety and the way the recipes capture the comforting, traditional character of Cuban cuisine. A great choice for anyone who loves trying new foods or wants to bring a taste of Cuba into their kitchen. Five stars!

Cuban cuisine is not the most vegetarian friendly. This cookbook has some good vegetarian recipes but they are few and far between.
