That said, The Essential Cuban Cookbook is a nice introduction to someone new to Cuban cooking — especially as it’s free for those subscribed to Kindle Unlimited. You’ll find the grilled Cuban sandwich, tamales (different than the Mexican kind), guava pastries, lechon asado (roasted pork), arroz con pollo, fricasé de pollo (more of a cacciatore than a gringo fricassee) — actually, most of the greatest hits. It’s not for Cuban home cooks looking to improve (like yours truly), but for others, it’s a solid four-star read.
I much prefer Grace Ramírez’sThe 5-Ingredient Electric Pressure Cooker Cookbook, even though Ramírez is Venezuelan and I’m Cuban. This 99-cent wonder is one of the best Caribbean cookbooks there is.
