I actually cook for two, but since hubby works at night, I don't often know what to make for just myself. I am not a fan of leftovers so I leave those for hubby to have before he goes to work. So I was offered The Cooking for One Cookbook by Cindy Kerschner I jumped at the chance.
At the beginning of the book, there is a two-week meal plan, which is a great idea. Some of the meals look really good too! For instance here is a day's meal plan: Tuesday week one
Breakfast: Blueberry Oatmeal Pancakes
Lunch: Roasted Vegetable Quesadilla
Dinner: Sausage and Peppers, multigrain rice pilaf and steamed broccoli
Dessert: Raisin Bread Pudding
Sound good? I thought so too

Chapter one has you helping to think solo and how to shop smart
Chapter two: Easy Breakfast for One
Chapter three: Lunch Made Easy
Chapter four: Meatless Mains for One
Chapter five: One if by Sea (Solo Seafood Recipes)
Chapter six: Proteins Made Simple (Poultry and Meats for One)
Chapter seven: Treat Yourself ( Desserts for One)

Now that that has piqued your appetite, this cookbook is the perfect thing for the person who eats alone, well you could double the recipes for two if you wanted.
I liked the ease of the recipes, each recipe lets you if the recipe is gluten, nut-free or whether it can be cooked in one pot or just bake and serve.

high calorie, high carb, high sodium

I actually found two recipes in this book that I could eat.
It would be nice if they gave nutrition info without the added rice or noodles or bread.

This book is informative. Most recipes are fairly quick and easy with not too many complicated ingredients to buy.
