This cookbook is geared to help those with prediabetes and diabetes type 1 or 2. It was when the author's husband was diagnosed with type 1 diabetes that the genius of this cookbook was developed. It starts out with the standard Instant Pot introduction: How to use an Instant Pot, its equipments and settings. Next, is The Diabetes Pressure-Cooker Pantry in which she lists go-to ingredients to outfit your pantry. I really liked the following section, Diabetes Nutrition. Under this topic we discuss the carbohydrates goal per meal, the two methods to eat a balanced meal and diabetes in the real world, where the author suggests the American Diabetes Association (ADA) for further research and outreach. The cookbook covers breakfast and the main meals, plus snacks, appetizers, Vegan and Vegetarian Main meals, soups, chilis, stews, desserts, beverages, and Broths and Pantry Basics. It also includes Cooking Charts and an index. This book helps diabetics plan and choose healthy meals, snacks and appetizers. It also aids in sparking diabetic cooking ideas. The Essential Diabetes Instant Pot Cookbook is definitely one I want to add to my cookbook shelf.

Has some basic recipes using familiar ingredients. For someone with diabetes it could be helpful and healthier.
Didn’t take any recipes from it however as my own are less caloric and lower in carbs too.

Barely any pictures. I never trust a cookbook that doesn't have a lot of pictures.
