This cookbook is geared to help those with prediabetes and diabetes type 1 or 2. It was when the author's husband was diagnosed with type 1 diabetes that the genius of this cookbook was developed. It starts out with the standard Instant Pot introduction: How to use an Instant Pot, its equipments and settings. Next, is The Diabetes Pressure-Cooker Pantry in which she lists go-to ingredients to outfit your pantry. I really liked the following section, Diabetes Nutrition. Under this topic we discuss the carbohydrates goal per meal, the two methods to eat a balanced meal and diabetes in the real world, where the author suggests the American Diabetes Association (ADA) for further research and outreach. It also includes Cooking Charts and an index. This book helps diabetics plan and choose healthy meals, snacks and appetizers. It also aids in sparking diabetic cooking ideas. The Essential Diabetes Instant Pot Cookbook is definitely one I want to add to my cookbook shelf.
