Craig's perspective on food and food systems has been influenced by his travels, which include many trips to Asia and several years living in Alaska, as well as his study of nutrition and traditional diets. Loved the explanation of the Thai ingredients since they are not familiar to me. Made it easy to go to my local Asian market and pick up the makings for really good broths and soups! Love the sipping broths. Great broths for the GAPS eating protocol. Delicious!

Easy to follow recipes with slight variations for many different flavors and dishes. I have been to Thailand Phuket, but not to Bankok.
I just want to add one ingredient that isn't mentioned...whole cumin seed...it works well for any of the Thai fusion recipes. Oh, and try throwing in a few frozen pork potstickers...lol, not a normal THAI soup ingredient, but so yummy!
Also I live in southeast coastal Georgia and my grocery stores are always out of fresh ginger, and I doubt they even know what Lemongrass is haha. So I found dried ginger pieces and dried lemongrass online at my favorite my spice sage shop. Just strain the broth before using. Sometimes I use pickled ginger and its liquid in pinch. Found some wonderful WIDE Thai noodles on Amazon. Try these great recipes, you can't really know how easy they are until you try! Experiment a little, substitute a lot! 🌴😍🌺🍍🌴
I learned a lot from this book. It was to the point simple and clear. 1,2,3,4! My favorite was education on the flavors to have on hand for thai cooking AND the benefits of each flavor. The difference western and thai bone broths. On my list of favorites.
