Shannon Epstein’s The Easy Healthy Slow Cooker Cookbook appears to be exactly the type of slow cooker cookbook for which I have been looking. As I read this cookbook yesterday, I marked quite a few recipes that I would like to try such as Pot Roast Soup, Spicy Sweet Potato Curry, Classic Spaghetti Marmara, Cinnamon-Honey Acorn Squash, Sweet and Spicy Chicken, Pure Butter Chicken, Herbed Turkey Breast, Sweet and Tangy Pork Tenderloin, and Barbecue Baby Back Ribs and Potatoes. The last recipe mentioned sounds truly yummy! The author has ‘tips’ for various dishes. She also put in conversion charts for US standard measurements to the metric system. I will be forever thankful to her for that! Finally, the author has a “popular food blog - Fit Slow Cooker Queen. Looking forward to adventures with my slow cooker. 4 stars.

A little more Indian food than I would have liked, but I don’t hold it against author Shannon Epstein. She includes a wide variety of foods — even cake and other desserts! Definitely a bargain at a mere $2.99 in the Kindle format!

I received this book as a member of the Callisto Publishing Club. This book is a life saver. I enjoyed making the easy recipes and was able to plan attend by cooking in several hours in my slower cooker. The food is wonderful, healthy and has saved me time and effort.

I purchased my first slow cooker right after I graduated from college. It traveled around the country with me, from house to house and job transfer to job transfer and if one can love an inanimate object, well, I did. I started work very early in the morning and would prepare everything at night, turn the slow cooker on before leaving and always had a great dinner when I got home, no matter how long the day or how tired I felt.
When my slow cooker finally and deservedly died after many years, I was working a job with more normal hours and I confess I didn’t replace it. Then weeks turned in to months and I felt like I was living a weeknight dinner preparation nightmare. Making the same things over and over because I just didn’t have the time or desire to do a ton of preparation after working all day. Then, I saw this cookbook and the light in my head went off. Why hadn’t I replaced my old friend the slow cooker? I went right out, bought a new one and anxiously awaited this books arrival.
After a few weeks, my meals once again became healthier, easier and delicious. Thanks to this book, there is Apple-Cinnamon Oatmeal or Creamy Breakfast Quinoa on the menu. Yes, my slow cooker is no longer just for dinner, though the Butternut Squash Risotto and Pot Roast Soup have quickly become household favorites. A great book with recipes running the gamut from breakfast, brunch, lunch, dinner, and dessert. I write my shopping list after choosing two or three more recipes and so far haven’t been at all disappointed.
If you have an underused slow cooker because you would like some new recipes, this book is for you. If you’ve never had one or failed to replace an old one (like me) and you purchase one, these recipes should make your taste buds sing and provide lots of kitchen inspiration.

Its hard to believe these are considered healthy because the ones I have tasted so far are so tasty and flavorful. You have got to try the Tex-Mex Chicken Soup on page 35 is my kind of chicken soup. Pepperoni Pizza Soup on page 37 or even the Meat and Cheese stuffed shells on page 67 With the nights cooler and Winter getting reading to charge in we will be eating a lot of hearty soups and stews for their comfort and warming benefits. I do wish there were more pictures to tempt me. I am truly one of those that eat with their eyes fist, nose second and lastly the taste and texture. The reason I went for the Tex-Mex Chicken Soup first was the photo of had my mouth watering.


They are easy to follow recipes that can be thrown into the slow cooker in the morning and be ready for a hot delicious meal in the evening. Check them out for yourself and you too will be loving your slow cooker even more.

Wonderful recipes, but a quick warning...

The recipes themselves look delicious and I'm sure they are, but the sodium content is REALLY high in quite a few of these recipes. One of the recipes for Jerk chicken was over 3,000 mg of sodium. I believe the AHA recommends no more than 2,000 per day. That was one meal. (There were other recipes, also that had a high sodium content as well) I do believe the author knows what she is doing in the kitchen, & I love the high protein content, so easy 4 stars. I just warn those who may be sensitive to sodium to modify and adjust. There's a ton of potential.

Love it!

Love the easy to understand, simple recipes. We are a family of five and it's always hard to try to watch what we eat and have it be healthy but also yummy for the kids too.

Haven't tried many recipes as my husband doesn't like slow cooker food - but he does travel . . .
