I really like this book. Most things in it are so simple to make. My favorite from the things I made were the meatballs because I've made them twice and used them for several different dishes. Second favorite was the chicken tortilla soup because you can't go wrong with Mexican flavors.
The book is full-color with a nice big photo of the finished recipe. There are still quite a few recipes I'd like to make, including Old World Peasant Soup, Pasta e Fagioli Soup, White Bean Chicken Stew, and Made-from-Scratch Minestrone Soup.
THINGS I'VE MADE:
Country Chicken Stew- This uses condensed chicken soup, milk, vegetables, raw cubed potato that all gets cooked together. You add cooked chicken to it at the end.
Italian Wedding Soup- This uses meatballs, chicken broth, and spinach. Very simple.
Chicken Tortilla Soup- The broth uses Mexican flavors and I really like it.
Lentil and Sausage Soup- Another simple recipe that uses basic ingredients. I used Kielbasa.
Swedish Meatballs (from the Swedish Meatball Soup recipe)- I made these but omitted allspice and nutmeg. I made these twice.
I read this as an ebook but there were pictures and everything. What I liked about the book was that there wasn't a long preface to the soup cookbook and soup recipes were grouped by type of soup, relatively easy to follow and didn't take long cooking times. What I didn't like about the book was that in order to achieve shorter cooking times, premade items like canned beans, canned mushroom soup, canned enchilada sauce (for example) were used which increase the amount of preservatives etc.
