One of the best cookbooks ever, definitely a book i go back to all the time. Must have if you are a professional. the first part of the book is a bit about Susur's story, just a small glimpse on what it take's to be a great chef. the second part of the book is all his classic recipes and methodology.
A really impressive & well written history of the chef along with some phenomenal recipes, which most home cooks will never do. However, it does a great job in describing flavoring combination and contrasting. Plus, it is designed a very unique way to make the 2 volumes 1 book.
A chef's read. The recipes are beyond my ability. I enjoyed the bio, and drooled over the photos. I'll save up and treat myself to a lunch at one of his restaurants.
