The Essential Wood Fired Pizza Cookbook: Recipes and Techniques From My Wood Fired Oven

Rate this book
I have always had a passion for fire and wood ovens. Anthony's own love for cooking with fire is contagious and his knowledge about wood-fired pizza is all encompassing. This is an inspiring and well-written book from a teacher you can really trust!—Alice Waters, author of The Art of Simple Food and Owner of Chez Panisse Restaurant

From Anthony Tassinello, chef at Berkeley’s famed Chez Panisse, your must-have pizza cookbook for making mouth-watering meals from your wood-fired pizza oven—from classically simple Margherita pizza to more exciting and challenging recipes.

From those first drawn-out moments when the blistering dough rises against the oven floor to that steamy first bite, chef Anthony Tassinello walks you through the time-tested tradition of preparing—and savoring—a perfect wood-fired oven pizza. Tassinello shares need-to-know tips and techniques for crafting palate-pleasing pizzas, calzones, hand pies, focaccia, and more, while reminding us all of the joy of gathering friends and family over a mouth-watering home-cooked meal. With over 85 recipes ranging from fresh takes on classic pizzas to inspired new combinations, plus a bonus “beyond pizza” chapter that showcases the versatility of wood-fired cooking, this is the go-to wood-fired pizza oven resource for 21st century home cooks.

I received a free ebook copy from NetGalley in exchange for a fair review.

This updated version of Anthony Tassinello’s cookbook is a great resource for anyone interested in wood fired pizza, or just pizza in general. There’s a lot of good information on setting up your oven and the types available for a home cook, as well as tips and tricks for success.

Even if you don’t have a wood fired pizza oven there are lots of delicious recipes and topping combinations to help the reader create delicious pizza at home!

There could be more photos of the finished products but don’t discount this resource because of that!

Great cookbook - lots of recipes and information on using your pizza oven.

This cookbook is well organized and has a great index with page numbers. There are multiple dough recipes - even one that is gluten free. Then recipes for sauce. There are recipes for making any pizza you could think of - meat, poultry, seafood, veggie. There are two chapters about making something other than pizza.

I love learning about different styles of cooking and The Essential Wood -fired Pizza Review has done a great job of intruducing us to the world of wood-fired ovens, their history, and tried methods. Although I dont have a wood stove, I look forward to using all the helpful information to create my own in time. In the first chapter you learn about the different types of oven as well as how they work. It also goes over safety tips and must have tools for your pizza endevours. In the second chapter the pizza is the star covering choices in ingredients, also tips and prep ideas for a smooth pizza session. I especially like the section on drink pairing. The second section of this book is dedicated to recipies which are nicely broken down into chapters starting with doughs and working through the different styles of pizza. My favorite though would be the Beyond Pizza where i learned that wood fired stoves are much more than for just pizza. I received this in exchange for a fair and honest review.
