I bought this book for my ex-husband, who was a cook & then the head chef at one of the Ovens of Brittany branches. The recipes are well tested but if you are looking for your favorite recipe, you may be disappointed! I remember the spice cake from the original State Street location: not included. And many will be looking for Morning Buns: not included (though that is not a surprise as it would be a lot of work for most home cooks). I worked as an assistant with the pastry items briefly at the same O of B as my ex so there were no surprises here for me, and many of the recipes may be familiar to those who bake a lot as fairly typical. But this book represents for many the turning point of restaurant cuisine in Madison & that counts for a lot!
