I received an advance reader copy of this book to read in exchange for an honest review via netgalley and the publishers.

15 Minute Indian is a Indian cookbook containing over 90 different recipes to make, all of which take 15 minutes or less to achieve.
This is a game changer for me. I love Indian food and have made a few dishes over the years from scratch but find them often very time consuming to make and too many steps to do in making them, not to mention the long list of spices and ingredients that often get thrown away after little use as I don't make the dishes that often. This book makes each recipe quick and straightforward and much more achievable to make meals from as well as cheaper to purchase ingredients for too.
The book includes different sections for different types of meals, including vegetarian meals too. The photographs are mouthwatering, and the book is easy to navigate and use with fantastic instructions, too. I highly recommend this book for anyone like me who loves Indian food but lacks the time it usually takes to make it.

I rarely cook Indian food because the recipes seem like such involved projects. This book is perfect for me. The recipes sound delicious and are quick and simple, the dishes are light, almost all are plant-based, the ingredients retain more nutrients because of the cooking speed, they are cooked in one pot and each dish uses a reduced number of spices (although there is still a lot of spice). Each recipe includes suggestions for what to serve with it and most of the recipes are accompanied by pictures. The 15 minutes includes both prep and cooking time. Most ingredients are available in supermarkets, but some might have to be ordered online.

Here are some representative recipes:

Legumes: brown lentils with baby spinach, zesty sugar snap peas, masala baby broad beans

Vegetables: fresh cauliflower and peas, asparagus and cherry tomatoes, aromatic broccoli, sweetcorn and peas

Fish & Seafood: prawn fritters, salmon with fenugreek and ginger, coconut, monkfish and prawns

Paneer & Eggs: chilli and garlic paneer, scrambled eggs with curry leaves, boiled eggs with spinach and dill

Potatoes: aloo palak, cumin and garlic potatoes, tamarind potatoes

Sides & Snacks: garden peas with fresh dill and mint, aromatic spiced long-stem broccoli, masala broccoli

Rice & Bread: mango pulp and lime juice rotis, aromatic courgette rice, quick vegetable rice with cardamom

Chutneys, Raitas & Pickles: banana raita, pickled red chillies, spicy tomato and mango chutney, various spice blends

Feasts: menu suggestions to feed larger groups

Thanks to NetGalley, Quarto Publishing Group - White Lion, and Anjula Devi for providing me with this ARC in exchange for my honest review. I will have to buy this when it comes out! What an amazing cookbook! As someone who has been vegetarian for about a decade now, Indian food has been a staple for me. It’s not something I make at home though…always bought premade. It just always seemed so daunting and like such a time consuming thing. To be able to have a whole book full of quick recipes—many of them vegetarian! There’s only one section for fish and the rest of the book is basically vegetarian. What a dream!!

The book is written well with personal touches included without it feeling like you have to flip through an eternity of irrelevant text to get to the recipes. The pictures are amazing. Layout and cover? Fantastic. Honestly, the only thing I found weird were probably things that were like lost in translation things. She mentions “shop-bought fried onions” many times throughout the book, and I doubt she means those fried onions that Americans put on green bean casserole. They’re included in the spices, so I’m assuming she means dehydrated onions? But even when I searched online…all that came up were the things we put on casseroles here in the states. Also, you might struggle to find some of the items in your grocery store, but I find that often even though I live in a big city. Really great cookbook.

Super delicious, easy to follow and quick-to-make recipes packed with flavour. Highly recommend this book! I will be making tons of recipes from this! Love that the end is also filled with recipes of essential components to Indian cooking.

In My Own Words: Cooking made easy! 15-Minute Indian offers tasty recipes, colorful treats for the eyes, and a wealth of knowledge on yummy Indian goodness for the health conscientious.

The ingredients were simple and familiar. The directions for preparation were easy to follow. The picture of the prepared dished were incredibly helpful and made me aware of what success looks like when it came to a completed meal.

Favorite Recipes: All of them! I cannot wait to try them.

Layout: The book was laid out perfectly. From the Table of Contents to The Simple Life and Index pages, it was completely captivating. The author's picture was on point, as well. Her positioning and placement at the table brought me full circle and reminded me of her father's words. It was well thought out. Nice touch!

My Final Say: This inspiring book was everything and then some. It was recipes, yes. It was also sprinkles of wisdom, memories, connection, and creativity. It was a culinary delight. Readers will feast on this!

Other: I very much appreciated the background given, regarding the author's health journey and choices that led to this project. It is exactly what I needed to hear in this season of life. This book is the gift that will keep on giving to so many people. Bravo!

An Indian cookbook, from an Indian, that is almost sacrilege to some. This is designed to be quick, one-pan cooking, with – once everything is mise en place – fifteen minutes between starting to cook and starting to eat. Basically you need a lidded wok or other large frying pan, and you ramp things up with everything diced small, the right amount of boiling water from the kettle, and most of the spices, adding the last jooj of flavour while the lid is off and everything liquid is reducing, or when things just go through a sizzle mode a while. With most people only having one lidded wok (which is one more than we currently have) the thing is not designed to produce a proper Indian banquet – but something dead handy, a single course for a midweek meal or quick lunch, that at least nods to the actual expected flavourings.

To that end there are copious spices needed, and no the grinding thereof is not included in the fifteen minutes. But build up a shelf of those regular supermarket spice pots and they'll quickly be attacked if you try more than a tiny portion of this book. We start with vegetables, such as masala beans, okra or sugar snap peas, and even beluga lentils. Aubergine bhajis take us away from pulses and legumes, and asparagus and beetroot are both here to surprise the connoisseur. Then an 'easy fish molee' gives the carnivores a nudge, but it's only for a brief diversion, as paneer and eggs are next – and then it's even more veggies. There are rotis galore, before the rice, with an unusual technique – boiling the heck out of it, and then sitting the lid atop a teatowel over the wok for full absorption without anything turning cold through condensation and ruining the rice that way.

To fit the time constraints corners are definitely cut – there is certainly no thinking about rehydrating dried pulses, and onions cook too slowly on the whole, so are the store-made fried ones. The mushrooms in a leisurely twelve-minute recipe are tinned. But I can't see this failing to replicate the flavours of the original, and in making a snappy course for one or for a lazy Susan for many, this really should work. I wouldn't say it's for the absolute beginner – there can be over a dozen things all to be arranged, and then thrown at the wok in short order, and us novice cooks could easily flap and ruin things. (You also have to negate the instinct to fill the teaspoons etc, as everything is level, which is the very last thing you find out here, annoyingly.)

The production here is great, with the photos looking dazzlingly colourful, everything portrayed, and with that potentially annoying 'why I included this recipe' yack reduced to a bare minimum sentence every time. That's the way it should be – allowing the recipe to be the focus. I dare say the only thing here taking more than fifteen minutes is actually choosing something to try first, for this looks a resounding success, especially for the vegetarians. Four and a half stars.

I am officially obsessed with this book.

I'm a vegetarian who is not super skilled in the kitchen, and I don't have a ton of time (read: any time). I've always assumed that cooking Indian food would be out of my reach, but this book changes that!

The recipes are easy to follow, and, as the title suggests, they are in fact quick to make—maybe not always exactly fifteen minutes (Devi explains her cooking process at the beginning and notes that it gets faster with practice, and steps like veggie prep might go slower if, like me, you're a snail in the kitchen), but roughly 15 minutes or less of active cooking time is still incredible! And every recipe ACTUALLY looks amazing—usually, when I'm looking over a cookbook for the first time, I start a list of the recipes I'd like to try, but in this case, I could see myself cooking through this cover to cover (just skipping the fish section). That's a huge deal to my kinda picky self!

Honestly, my favorite part of the book was the inclusion of gorgeous photos of almost every recipe. The last few cookbooks I've read have been light on the photos, and they really make a huge difference, both for getting you excited about what you're about to cook and, honestly, for helping you figure out WHAT to cook (and what the final dish should look like)! As someone who just had a long debate about whether the sauce for a dish from a different cookbook was REALLY supposed to go UNDER the rest of the ingredients ("Do they really do that in real life? I thought only restaurants did that."), I'm grateful for photos.

I've only been able to try one recipe so far (need to make a shopping trip for spices), but it was delicious. Excited to try more!

I cook Indian food quite regularly and I love the long process of preparing the spices and cooking a lovely Indian dinner. The idea of getting there in a shorter time was intriguing and that is what attracted me to this book.
And the book delivers on its promise!
The most challenging part of using this book – if you are not already into this type of dishes, – will probably be to make sure to have the ingredients. It is worth spending a bit of time getting a good collection of the spices that are used in the recipes to be able to enjoy this book fully.
Once this is done, there is a real wealth of recipes available to enjoy. Although there are no meat recipes in this book, there is plenty to be inspired with. I made a few dishes (my favourites were the easy fish molee and the coconut prawn and monkfish) and I found the recipes well explained, easy to follow and...they worked. It took me a little more than 15 minutes, but it is still a quick cooking time and perfectly suitable for a weekday dinner. I also liked the sections on pickles and chutneys, as well as the section on making masalas and spice mixes ahead of time.
The illustrations are nice and colourful, very appetising.
A nice little book to easily bring a bit of the Indian homecooking magic to your days.

While I'm pretty often considered a picky eater (I haven't eaten red meat in like 30 years! Bananas are gross!) I'm pretty down for trying new flavors. So while yes, my usual Indian order is butter paneer (sorry, it's ridiculously comforting) I can get pretty experimental left to my own devices with dal. And I've had fun messing around with a couple of the recipes in this book, though I haven't yet had the chance to dive too deep. While I totally appreciate that this is clearly a book for the British, I haven't been able to source ingredients for all of the recipes I want to try, especially while trying to avoid Amazon. A variety of tinned lentils would be a dream, but living in the states the book is a little less pantry staple and 15 minutes and a little more plan ahead.

That being said, I'm excited to borrow this book, and potentially pick up a copy, come summer. There were some fresh veg recipes that I would love to pick from my own garden.

I also loved the included photos. And that from what I can tell, there's not a single recipe written in a confusing way and I believe all of them fit on a single page.

TL;DR: If you live in the US, these recipes might not take 15 minutes due to lack of easily sourced tinned goods, but it's worth the effort otherwise.

I am not including this book in my count for my 2025 reading goal.

I enjoyed the variety of recipes, and that there were so many different flavors and combinations. The recipes look authentic, and there are quite a few I plan on making soon.

The photography was lovely, but I wasn't a fan of the large numbers for the steps on the recipes. It made it harder to read for me.

The instructions were very simple, and I think this would be a good book for someone who already has some experience cooking Indian food. I feel it could be difficult for a beginner to pick up and immediately start cooking from.

The ingredients could also be difficult to source if you don't live in a larger city, or have an Indian or Asian grocery store in your area. I live in a rural area and would not be able to get most of the ingredients here without having to drive about an hour away, or ordering them online.

15-Minute Indian is a useful cookbook full of quick, healthy, and mostly vegetarian Indian food recipes.

The photos in this cookbook are stunning. I loved that it is very informative when it comes to spices and how to blend them. There is a wide array of recipes in here so I'm sure everyone who looks through this book will find something to make. I was a little taken aback when I realized most of these recipes are vegetarian or pescatarian. I personally don't mind this, but it may come as a surprise to some. But in the end, this is one of the main reasons everything is so quick to cook!

This is a fantastic book for people who love Indian food or are interested in trying it. I love the concept of quick and easy Indian recipes as it takes out the daunting task of trying something new or different from your norm.

I look forward to trying some of these recipes ASAP!

While I wouldn't quite call these exactly 15 minute recipes (at least not any that involve vegetables that likely need some chopping), I still enthusiastically applaud all the work that Anjula Devi was put in to creating a large collection of dishes clearly meant to make it easy on any home chef's time. Most of them come together through a mix of steaming and stir-frying - which honestly sounded a little curious at first, but all of the tasty-looking photos admittedly won me over to this particular cooking strategy. I definitely plan on giving a few of these a try in the near-future. However, that may be a bit tricky, because the variety of vegetarian-and vegan friendly dishes here is frankly quite wonderfully expansive.

This is a great cookbook for anyone who wants to try their hand at cooking authentic Indian food on a time budget. This book does have some fish recipes, but most of it is plant based, vegetarian friendly.

Devi takes great care to make each recipe easy to follow and includes a small note about why she included each recipe in the books along with pictures of the final dish. She also made sure to make recommendations on which recipes pair well together and a section in the back that shows the best recipes to combine to host dinner parties.

I enjoyed this book and can’t wait to try out some of these recipes.

I didn’t realise from the cover and summary that this book contains almost entirely vegetarian / vegan recipes (and 1 chapter with fish recipes). As a vegetarian who loves Indian food, this was unexpected but appreciated.

Overall it looks like a book which will become really useful to me - lots of tempting healthy recipes, accompanied by lovely photos, and for someone who is already a keen cook - the majority of the ingredients are already in the cupboard (tamarind might be a bit trickier to find..).

I’m a little dubious about the 15 minute claim but none of the recipes look too complicated or onerous, the instructions look clear and straightforward and I’m looking forward to start trying them out.

As busy professional and someone who has to return to office, this book - "15 Minutes Indian" could not have come at a better time! The cookbook delivers on its promise of quick, authentic Indian meals without sacrificing flavor. Having tested recipes like masala broccoli and cardamom potatoes with dill, I can confirm both were quick and delicious results. The book's format is user-friendly, with clear kitchen-friendly instructions that are easy to follow during weeknight cooking. It offers a thoughtful mix of hearty meals and creative twists on traditional recipes, preventing menu fatigue while maintaining authenticity.

I always want to cook Indian food but seldom do. Quite a few of the spices are not available to me locally. I don’t want to invest a ton of money in spices that I’ll only use a few times a year & then have to toss them due to staleness. Banana shallots & Thai green chilis aren’t in my markets. The few times a year that I want Indian food, I’ll just go to one of the local Indian restaurants. That said, if the author made me these recipes, I’d try them all. If you have the ingredients available to you & want to make quick food, you might want to add this to your cookbook shelf. Unfortunately, I will not.

My new ‘go to’ book. It’s nothing short of brilliant.

I first came across Anjula Devi through the February 2025 edition of the Sainsbury’s magazine, and having made and been wowed by all of those featured recipes, I knew I absolutely needed this book in my life at some point! I’ve just spent the best part of an hour going through the Kindle version, and I have book marked several recipes that I will be making in the very near future. In fact, courgettes (in some form or another as I haven’t quite decided which recipe to make) will be on the menu tonight.
On a side note, I also welcome the ‘serve with’ suggestions that Anjula makes - I find them very helpful.

This is a great compilation of Indian recipes, all done in up to 15 minutes and in one pan. As any cookbook, it is divided into sections such as vegetables, fish & seafood, legumes, sides & snacks, etc. It’s a great book for those short on time yet who wants to put a healthy meal up for the family. Looking forward to trying some of the recipes in the coming days.

The look of this recipe book is beautiful. From images to fonts to colors, I absolutely love the thought that's gone into the design of this book, and I appreciate the work. As an Indian, I love all the spices used here, especially that fact that it isn't all chili and garam masala all the time, though those are pretty essential to traditional Indian cooking. All of the writing is very simple and short with all the dishes compartmentalized into different categories. Do recommend!

Well put together recipe book with simple quick recipes.

I did find the constant instructions to “Fill and boil a kettle”:some what strange but I suppose that is to keep the time to under 15 mins per recipe.

Thanks to NetGalley for the ARC. This was one of the few recipe books that worked well as an ebook.

The pictures in this book made me hungry. I found several recipes that sounded good and they looked easy to follow. I am excited to try some of these.
