Bought this about 9 yrs ago along with my first Instant pot.
Better money has not been spent! Have gifted another 4 copies.

Toula may not be a household name outside Michigan. She is a professional cook & teacher and has done a wonderful job clarifying and taking the mystery out of using the newer (last 30 years) pressure cookers. She shares her experiences from kitchens US and the EU. There is a helpful Herb pairing chart for just about anything on page 206.

I've used these recipes for both an on the stove low pressure pot & the Instant Pot Duo & had wonderful results. Her techniques & seasonings are superb. Never had a fail.

Loses a star immediately for no pictures, using the phrase "seal in juices" while explaining searing meat, & not having recommended adjustments for electric pressure cookers.

Loses another star for recommending the "cold water" method of quick release. Using this method can lead to creating a vacuum in the pressure cooker. Making it a good way to ruin your pot.

Other bits I found annoying:
"Mexican sausage" in place of "chorizo"
"French Burgundy Beef" in place of "Boeuf Bourguignon"
"Gumbo" with no roux -- that is not gumbo
Mexichicken -- I don't even know why that annoys me.
