The author offers a comprehensive guide to pasta preparation, with more than three hundred recipes, both simple and complicated, from every region of Italy
Beautiful book with great recipes and step by step instructions on how to make every kind of pasta you can dream up. It’s a timeless classic for sure. This book will never go out of style.
May 4, 2019, author Bugialli passes away at age 88. I purchased this book in a large lot of cookbooks at auction. I wasn’t aware of the author’s reputation at the time. The 1988 edition’s photos are dated and not particularly appealing by today’s Instagram-worthy standards. There are many hand-drawn images demonstrating different methods of pasta making (though many appear to demonstrate how to roll & cut pasta through a machine - not something that needs repeated demonstration, really. I haven’t tried any of the recipes yet - will return to the review once I have.
