This is a book for professionals, but it is full of interesting ideas for interesting ice creams such as various tea ice creams and unexpected ingredients such as cauliflower. The ice cream cakes, etc., are way beyond home cooks (or at least me), but again they offer interesting ideas.
Wow. Hedh is the real thing, an old school pastry chef. This is the ice cream book for serious cooks, food nerds and people who aren't scared of degrees Brix. Lovingly, lushly photographed. There are some weird turns of phrase that one assumes come from translating- but overall this is top-notch food porn. Only food porn with recipes! I want 90% of these ice creams. Tonight would be good.
