Dutch Oven Cajun and Creole

This comprehensive cookbook tells home and outdoor cooks everything they need to know to make irresistible Louisiana dishes in cast iron Dutch ovens.

As the president of the Louisiana Dutch Oven Society, Bill Ryan has perfected the traditional, rustic methods of preparing classic Louisiana cuisine. In Dutch Oven Cajun and Creole, Bill serves up everything from breakfast to dinner as well as breads, sides, and desserts. He shares some of his prize-winning recipes, as well as essential tips for cast-iron cooking.

Give a few of these Louisiana favorites a try: Beignets, Shrimp Creole, Dirty Rice, and Crawfish Etouffee. And, if that doesn't fit the bill, Grillades and Grits, Cajun Cacciatore, Mardi Gras Rolls, and Lime-Coconut Buttermilk Pie certainly will.

Simple recipes that sound fast and easy, but tasty . Photos are included for many recipes (but not all) located at the recipe, which is a plus. Chapters include Dutch oven cooking overview, Cajun seasonings, breakfasts, main dishes, sides , breads, and desserts. Recipes include creole grits, pancake casserole, bloody Mary breakfast casserole, grillades, presnik, Cajun cacciatore, Cajun pork roast, crawfish ettouffee, alligator puffs with wine sauce, bayou chicken with andouille tarragon cream, lobster creole, shrimp creole, corn and green bean casserole, sweet and sour cabbage, potatoes with apples, crawfish french bread, sweet potato corn bread, mardi gras rolls, pioneer journey cake, dump cake and many variations, lime coconut buttermilk pie, peachy spice upside down cake, bread pudding donut style, Cajun cake, and rum cake (i have made this many times long before this cookbook as its a classic using box mix and pudding). This was the hoopla library eBook.
