Although 20 years old and bought maybe ten years ago, with COVID a solid read. I find the chapters on smoking pastes and vegetables unique, demystifying the use of a stove-top smoker. The Lemon Ginger broccoli is a marvel as is the smoked Tomato Ketchup. Use of fructose as a culinary ingredient has the same effect as reading about using MSG as an ingredient in 50 year old cookbooks. A good read with some solid elements.
