This text presents a comprehensive look at this once-forgotten beer style. It covers the history, style, profiles, procedures and recipes of this family of beers, as well as providing the necessary information needed to understand, appreciate and brew Bock.
Substantially more technical than I was expecting. I knew it would go into the style deeply, but then it got deep into the chemistry of melanoidin production, their effects on oxidation, and a whole lot more on HOW these beers get made. Focuses on commercial scale technique, but enough of it translates to 5 gal. batches just fine.
This disappointing entry in the Classic Beer Styles series gives a lot of interesting insight into the traditional brewing process of these German lagers, and some history but very little in the way of sensory notes. The recipes, as is standard for this series, are a bit out of date, assuming that many of the resources craft and homebrewers have now are unavailable.
Really technical (in a positive manner) as compared to the rest of this series. Think I'll try my hand at a Bock this summer... maybe even a dopplebock.
