Traditional soups relied heavily on potatoes. Still, the book was a pleasant read, & there were quite a few recipes that work well, either as written, if that's your thing, or as springboards. I enjoyed the regional data.

A very good thorough resource on a very specific topic. Very good information on the history of the soups from various regions of France.
