Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.

Would have given it 5 stars, except that it lacks a separate map for Central Asia, so I am constantly flipping between Northwest Asia* and The Middle East in order to follow the paths of my various "Great Game" explorers - you can't just say "turn to page 46 to see the bottom half of Uzbekistan"! But other than that, this is a plain-and-simple atlas that gives me pretty much just what I was looking for.
* ("Northwest Asia"? Just what the fuck even IS that??)
