Almost a standard reference work on pickling I would say, certainly for the UK.
I see that the current edition shows nearly 50 more pages than my original 1988 copy.
Whether this is because the content has increased or whether it's in larger print taking up more pages I don't know as I haven't seen the current edition. I hope the former is the case.
Considering that pickling was such an important way of preserving produce in glut times for consumption later in lean periods generally worldwide, it's surprising how few books there are on the subject.
Particularly strange when so many people are pickling now not as a way of preserving, but more for the fact they taste so good !
