After purchasing a new pressure cooker I have been trying to familiarize myself with pressure cooking. I have looked at lots of cookbooks and of the bunch this is the best collection of vegetarian recipes. Simple and straightforward with some nice recipes.

Pressure cookers are awesome. Before this, I'd only used mine to vastly speed up the time for cooking dried beans (cheaper and better consistency-wise) so it's nice to have a new culinary area to explore. Only made one recipe so far, but it seems like they'll all be at least decent.

Too many of the recipes call for meat substitutes and pictures would be nice, but not a bad recipe collection if you only want meatless ideas.
