The herbs that we frequently see available for sale in supermarkets throughout Europe are usually the species of herbs which are the easiest for farmers to grow on a large scale, and the species which are the most cost effective for farmers to grow commercially.
While there has been an increase in the variety of species of herbs which are now available in many of the supermarkets throughout Europe in recent years, there are still quite a few species of herbs that are only available in specialty stores, health food stores, gourmet markets, and in the grocery stores in ethnic neighborhoods.
In "Hatfield's Herbal: The Curious Story of Britain's, Wild Plants," Gabrielle Hatfield describes a number of herbs which until relatively recent years were not usually found in most of the supermarkets throughout the Europe, and she also describes some species of herbs which are still relatively unknown to people who are not culinary experts.

In this book, Gabrielle Hatfield describes the histories of some herbs which are very commonly used in the present day, as well as some herbs which most readers will not likely be familiar with, unless you are a professional botanist, horticulturalist or a taxonomist.
If you're interested in expanding your recipe collection, and if you're interested in attempting to experiment with herbs that you've not previously tried, you will enjoy this book.
