Careful changes in our kitchen practices can make a vital difference to the environment - as well as to our gas and electricity bills. This book discusses the 'Magic Lid' and how to use the saucepan to achieve a crispy finish and the use of the oven. It also discusses food miles, kitchen consumables, cleaning and storing, and green kitchen design.
I'd hardly call advice to handwash your dishes in order of dirtiness inspirational, and elements like *use the lid when cooking to cut down on cooking time and thus save energy* had me rolling my eyes. Not the reference book of useful green kitchen tips that I thought it would be.
Wish I had found this book during the hot summer we had two years ago--this green cookbook also teaches you how to cook food thoroughly with less heat. Recipes are quick and easy, mostly for smaller families i.e. 4 people or fewer.
