This book teaches the basics of wheat and baking breads with it. It outines when and why additional ingredients may be added to whole wheat bread, taking the mystery out of using 100% whole wheat. Because I grind my own wheat and have been making my own bread, I've come across several problem loaves, but I never knew what I did wrong. This book has educated my about my mistakes and taught me ways to fix them. I haven't had a problem loaf since reading this book!
