Mostly useful cookbook, however it’s not completely vegan.
For example, honey is listed as an ingredient for carrots with cumin and couscous on page 42. It’s also an ingredient in the pan-fried carrots and tempeh on page 150.
There’s also some poor formatting throughout. It’s often ingredients being listed immediately after another, an example is page 56 black beans with butternut squash. I attempted the chickpea moussaka on page 60, however, I had to throw it out, the potatoes were raw. Maybe water was forgotten from the ingredients.
The measurements and name of ingredients seem off too, example aubergine tomato and pine nut pasta page 112 says 500gm tomato purée (paste). It seems passata cooking sauce could be what they mean.
Overall, it’s been hit and miss. I would encourage anyone to thoroughly read the ingredients and method before starting, to ensure edible and vegan results!
Style over substance. Love the photography and most of the recipe ideas, but following them exactly as written will lead to some bland undercooked meals. So perhaps not great for beginner cooks who don’t feel comfortable with some improv.
I'm not vegan, but I am a fan of one pot meals that are super simple, and I love the imagery that somehow relaxes me and makes me feel like I CAN make a good meal. Plus, I'm trying new things!
This book has pretty pictures of all the ingredients in the one pan and then the finished product. I made my own variation of the humous spaghetti which was nice and lots of the other Recipes look good but I am not sure how successful they will be. Putting all the ingredients in at one time as it Makes little sense, when things take different lengths of time to cook. One recipe says it takes 20 minutes to cook lentils and potatoes and that includes bringing it to the boil. I just don’t think that’s true! Finally there is honey in recipes which is not vegan. Please don’t call your book vegan when it’s not! Only confuses people. Is it from an animal? - yes - not vegan Is it from an animal? - no- vegan
I don’t think it is fair to give a simple, well laid out book less than three stars although as it calls itself vegan when it is not maybe I shouldn’t?!
Such tasty recipes! Very easy and user-friendly. A picture for every recipe. Actually, two pictures for every recipe - before and after cooking! Easy, clear and simple instructions. Is now used every single day and lives on the kitchen bench, always open to a delicious easy dish!
Healthy. Easy. Yummy. What more could you want? It's the one pot part that got me because cooking is messy and I don't like the clean up. Each recipe has a big, beautiful picture, few ingredients, and simple instructions. My favorites so far: Thai Rice with Broccoli, Aubergine (eggplant), Tomato, and Pine Nut Pasta (I sub almonds), and Tomato, Courgette (zucchini), and olive pasta. Enjoy!
Easy and accessible for someone who enjoys minimalism, simplicity, and great visual recipes so you always know exactly what you are getting. The cookbook I most frequent due to it’s simplicity. Personal favourite- Paella pg.36
