I was given an opportunity via the publisher to read the Easy Chicken Cookbook: 75 Simple Meals for Every Day. I voluntarily chose to review this cookbook and my opinion is freely given.

The cookbook starts off which such advice as chicken made simple, safety tips, common cuts of chicken, terminology, 6 easy sauces to complement the chicken, as well as 6 easy sides.

The recipes are divided into logical sections, which I have listed below with some of the stand out dishes:

5 Ingredients or Fewer: Spicy Salsa Baked Taquitos; Simple Herb-Poached Chicken Breasts; Sweet and Crunchy Quinoa Bowls

30 Minutes or Less: Velvety Corn and Ginger Soup; Deconstructed Egg Roll in a Bowl; Caprese Chicken Burgers; Pad Thai with Crunchy Peanuts

One Pan: Chicken Fillets in Mushroom Marsala Sauce; Southern Skillet-Fried Chicken

One Pot: Old-Fashioned Chicken Noodle Soup; Shortcut Chicken and Dumplings; Company's Coming Cassoulet

Pressure Cooker or Slow Cooker: Red Chicken Chili with Pepper and Zucchini; Shredded Teriyaki Chicken; Easy-Cheesy Chicken Parmesan

All of the recipes list particular dietary restrictions, like gluten-free and dairy-free. I would have liked more photographs, as this would provide much inspiration. Overall, the Easy Chicken Cookbook: 75 Simple Meals for Every Day delivers on its promise and would be a good addition to any kitchen shelf.

Callisto Media/Rockridge Press was kind enough to send my sister a copy of this book to read in exchange for an honest review. I wanted to read and review it as well - I read as fast as she does, no surprise. #twister

This is a great little book if you are sick of eating the same thing over and over and over - I could do that for only shawarma!

the recipes are simple and yummy and the photos are great as well - I cannot wait to cook my way through this book...or eat what my sister makes when she does the same thing.

I eat eat chicken all the time, and usually fix it one of four ways: marinated grilled, grilled with BBQ, baked with lemon pepper seasoning, baked with BBQ. While those methods are great, they get old, and I was very excited to crack this open for some new recipes. What I've made has been delicious, and I'm expanding my cooking knowledge with easy to follow recipes!
