I LOVE THIS COOKBOOK.

I have Hashimoto's Disease and I basically feel like crap anytime I eat something that tastes good, so I am very excited to try these out. They look like real food and it's written by a dietitian so you know it's legit. Stew, meatballs, jerky, crackers... yes please.

As a registered dietitian, why are we pushing diets such as Paleo that could lead to other health issues such as high cholesterol? Also, these recipes have ingredients that are not easy to find - and can be expensive. Since health care costs are always rising and food costs have increased, people are looking for more ways to manage their conditions through diet. We need to focus on reducing barriers not creating more.

I was given an opportunity, via the publisher, to read the The Easy Thyroid Diet Plan: A 28-Day Meal Plan and 75 Recipes for Symptom Relief. I voluntarily chose to review this publication and my opinion is freely given.

This publication is more than just a cookbook, as the author has given a good deal of information about thyroid issues and how to reduce symptoms through healthy eating. Part One of this book involves restoring balance in your body for overall thyroid health. The author describes the thyroid (secretes thyroid hormones that affect functions of the body like physical growth, brain development, and body temperature regulation). The author goes through causes, triggers, different disorders, treatments, and the role of food in overall health. There are autoimmune issues that can affect the thyroid, so this diet plan encompasses elements of the AIP protocol and Paleo diets.

As the book progresses, the author discusses thyroid friendly foods to have on hand and has a 4 week meal plan. The first two weeks are Paleo, as it is a less restrictive diet than AIP. I like how the author includes the shopping lists, along with the menu plans, with prep and cooking tips included. Those looking to just include good recipes into their diets may find the menus to be too restrictive and too structured.

The recipe sections are as follows, along with some of the standout dishes:

Breakfast and Beverages: Paleo Protein Hot Chocolate; Bacon and Faux Eggs Breakfast; Sweet Potato Sausage Hash

Soups and Salads: Hot Bacon Spinach Salad; Creamy Chicken Curry Soup

Plant-Based Entrees: Creamy Pesto Spaghetti Squash; Mushroom Risotto, Zesty Broccoli Rice

Fish and Seafood: Crispy Fried Shrimp Tacos; Lemon-Ginger Salmon; French Seafood Stew

Meat and Poultry: Herbaceous Chicken Meatballs; Slow Cooker Barbacoa Beef; Cider-Braised Apple-Glazed Ribs

Sweets and Snacks: Banana Bread Energy Bars; Sweet Mango Custard; Make Ahead Beef Jerky

Staples: AIP Coconut Milk Yogurt; Umami-Rich Mushroom Stock

Overall, The Easy Thyroid Diet Plan has a good blend of recipes from breakfast through dessert. The cookbook is lacking in pictures, which is unfortunate as photographs serve to inspire people to try new dishes. I would recommend this resource/cookbook for the newly diagnosed, as the meal plans can help beginners to really embrace the health benefits.

As someone who lost the majority of her thyroid to thyroid cancer years ago, finding ways to deal with my hypothyroidism has been difficult, particularly because the remaining piece hasn't ever been completely cooperative with medication. Add to that years later finding out I had autoimmune complications that we hadn't known about at the time, it's been difficult to balance lifestyle changes that needed to be made.

I want to be honest...I haven't done the meal plan yet. What I have done, though, is read the chapters on understanding the dietary needs and the adjustments that could be helpful, and really got a clearer understanding of so many of the things I didn't know were diet related in my life. The 28 day plan begins with 2 weeks of Paleo, and then weeks 3 and 4 offer 2 variations...one for those who Paleo is enough on it's own, and one for those who need to implement AIP guides into their diet. There is a detailed grocery list for each week of the plan so that you have it all set for you in and have no doubts when you get to the grocery store. Very helpful. If you are suffering from any thyroid related problems, this is a great way to give yourself a jump start and see if you have begun seeing any improvements in your symptoms.

The book starts out with some basic information on thyroid disorder and she makes it very easy to understand. She explains what it is and some frequent FAQ. She covers common triggers and the auto immune connection. She also gives you some information on the different types of thyroid disorders. There is some information on foods to avoid and those that are safe for most people.

The author uses the Paleo approach for two weeks. If your symptoms don’t clear up then you go on an elimination diet for AIP. She has shopping list broken down by weeks along with meal plans.

I deal with AIP issues myself and occasionally my thyroid flares up. This isn’t a cure all but the author doesn’t claim it is. Food is important along with a good medical doctor.

There is a good variety of recipes to cover every meal. The recipes are easy to follow and most people should find a good amount of recipes to add to their menu.

A great meal plan option if you can eat certain foods without restriction, but you can also modify as needed and still get awesome ideas.
