Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

This is supposed to be an encyclopaedic publication for the young. Early learning steps on a variety of subjects. However, there is an interesting gap in key early history, with the book taking a concerning jump from the Egyptians to the Romans, leaving out the Greeks. How can ancient Greece, the cradle of western civilisation, which established the all important foundations in almost all walks of life, and which matter to this day, be missing, is defeating comprehension. Democracy, politics, philosophy, literature, poetry, mythology, theatre, mathematics, physics, architecture, to mention but a few contributions, all conveniently left out.
Is this fundamental omission the result of a naive or coerced perspective? Concerning in either case.
I would strongly not recommend this book if you aspire to kick off an accurate learning curve for your young ones!
