Short book from 1986 with around 100 step-by-step garnish techniques . I only tried about 4 or 5 of these garnishes, but I agree with another reviewer: they are a little dated and not great for modern cooking. Lots of work for little payoff. But a few that worked for me and I will probably make again: radish fans, vegetable ties, as well as the easy to follow crimped pastry technique.
